Mama’s Fresh Salsa!
Mama’s Fresh Salsa –Perfect for your next Mexican dinner or themed get together.
8-10 Roma Tomatoes, chopped very small pieces
1 Onion, minced (Walla Walla Sweets are best, but yellow is fine too)
4 Green Onions, chopped
1 Bunch Fresh Cilantro, chopped (leaves only)
1 Jalapeno Pepper, seeded and minced (If you like it hotter, leave the seeds!)
1 -12 oz can Diced Tomatoes (not required but adds vivid color, for winter when tomatoes aren’t as vibrant in color)
1/2 tsp. -1 tsp. Salt
1/4 tsp. Black Pepper
2 Tbsp. Lime juice, fresh squeezed
2 Garlic Cloves, minced
Cut all tomatoes, onions, green onions, cilantro, jalapeno pepper and add to large bowl. Pour in canned tomatoes and add salt, black pepper, garlic and fresh squeezed lime juice. Toss well. *** To make this super fast. Cut tomatoes in quarters, as well as onion, toss it as well as other ingredients into Cuisanart Food Processor (not the green onions) and pulse it until you get the desired consistency. It just makes this recipe that much easier!!!
Allow to rest in refrigerator for 30-45 minutes before serving, so that all ingredients can blend together.
Serve with taco chips, tacos, burritos, any Mexican dish, or try on a hamburger or omelet.
