Gluten Free Red Velvet Cream Cheese Swirl Brownies

Red Velvet Cream Cheese Brownies Valentine’s Day is around the corner and it’s time to start thinking about delicious gluten free desserts to make for your sweetheart!  Mama’s Gluten Free Red Velvet Cream Cheese Swirl Brownies are a perfect way to say, “Will you be my Valentine?”  These are also perfect to serve at the upcoming Superbowl party!

Red Velvet Cake is a popular dessert that is famous for being light, moist and with a delicious rich flavor.  It is often made using a cream cheese frosting.  The cream cheese topping on Mama’s Red Velvet Cream Cheese Brownies is a perfect nod to the traditional red velvet cake, not only that, the swirl design is absolutely stunning.  I made these this weekend for a gluten free fair in Kalispell and my guests absolutely loved them, and I hope you do too!

Red Velvet Cream Cheese Swirl Brownies

Mama Recommends:

Mama’s Almond or Coconut Blend Flour ~ Start with the best flour blend for excellent results!

Gluten Free Mama flours and mixes

9 x 13 baking pan

Wax Paper- The wax paper allows you to easily room the brownies from the pan and slice into nice squares for your serving plate.  Place a piece of wax paper big enough to go across the entire bottom and the sides of the pan.  Lightly spray with cooking spray, then add the batter.

Red Food Coloring –  If you prefer not to use food coloring, add two Tablespoons of beet powder to your flour to give it a red color.  Keep in mind that the beet powder will not make it as bright red as the red food coloring.

Fun GFM Tips:  Make it festive and bake in miniature heart baking pans.  Or remove the brownies from the pan and use a heart shaped cookie cutter and cut out hearts.  The swirl design and red color makes them look very Valentiny.

Serves: 24 squares
Ingredients
  • ½ cup butter or dairy free margarine, melted
  • 3 eggs
  • 1 Tbsp. red food coloring
  • 2 tsp. vanilla
  • 1 ¼ cups sugar

  • ¾ cup Mama’s Almond or Coconut Blend Flour
  • ¼ cup cocoa
  • ½ tsp. xanthan gum
  • ¼ tsp. salt

  • Cream Cheese Topping
  • 8 oz cream cheese
  • 1 egg
  • ¼ cup sugar
  • ¼ tsp. vanilla
Instructions
  1. Preheat oven to 350°. Line a 9x13 pan with wax paper. Lightly spray wax paper with cooking spray.
  2. In a small bowl combine flour, cocoa, xanthan gum and salt. Set aside.
  3. In a large bowl combine eggs, vanilla, red food coloring and sugar. Mix together. Add melted butter and mix well. Slowly add flour mixture, and mix until combined. Remove ¼ cup of batter and set aside. (Batter will be thick, but if too thick add 1-2 Tbsp. of water.)
  4. Spread batter evenly into pan.
  5. Prepare cream cheese topping. Soften cream cheese in microwave for about 30-35 seconds. Add egg, sugar and vanilla. Mix well. Spread evenly over the entire top of brownies.
  6. Using reserve red velvet batter, drizzle several spots over cream cheese, trying to make sure there is a little bit in all sections of the pan.
  7. Run a knife through the red batter and cream cheese in zig zag motion across width of pan and then down the length of the pan until desired swirl is achieved.
  8. Bake for 30 minutes. Cool completely. Remove brownies from pan, by lifting up the wax paper. Slice brownies into squares and place on decorative serving plate.

    This is one of the best recipes ever. Absolutely delicious and not overly sweet and a great texture. I cut then into hearts and they were beautiful too.
    I brought them into work as an example of GF and if I had not told anyone it was GF I don’t think they would have known.
    But they could be dangerous. I could have eaten the entire pan myself.

    I have an allergy to Xanthum Gum, (migraines), so can I just omit it in recipes or use a flour which does not have it added.

      I think you could omit it in these brownies. Not all recipes. If you can have guar gum use that. Or if you can have gelatin mix together 1/4 tsp gelatin with 1 tablespoon water and add to mixture. Or mix together some arrowroot starch as an added binder. But for this particular recipe I think it may work without xanthan gum. Please let me know how it turns out if you try it.

    I made these and they were really good- but the frosting nestled into the middle of the brownie while baking and did not stay on the top. The flavors were all there but it didn’t turn out as expected.

      Yes, it does bake into the brownie, but it should have looked similar to the picture. I spread the cream cheese throughout the entire top. Then Drizzle little bits of the batter over the top of the cream cheese, randomly. Then using a knife you go back and forth across the top both directions. That is what gives you the marble design. I am sorry you were disappointed. 🙁

    I have both almond flour and coconut flour but not a blend as I am doing low carb. How can I make this? Looks delish!

      You don’t want to bake with just almond or just coconut. You want to generously mix it in with several gluten free flours.

    We have tree nut allergies in addition to Celiac, could I substitute GF all purpose flour for the Almond or Coconut Blend? If the AP flour had Xanthan gum in the mix, would I omit the additional 1/2 tsp?

      Yes you can. If you use a blend that has xanthan gum you will need to not use xanthan gum. Please keep in mind, those that put xanthan gum in the mix the recipes won’t always turn out perfectly as my experience is that they use too much xanthan gum. I think their rule of thumb is 1 tsp. per cup which is way tooooo much, IMO. So hold back some of the flour and if it looks like it needs more then add the rest. Make sense?

    Can I use just regular GF flour and have it come out as well? They look amazing but I don’t currently have your flour and want to try them out before Valentines Day.

      Gluten Free Mama’s Flour blends are Regular Gluten Free Flour. LOL. But yes, you can use any high quality gluten free flour blend with any of my recipes and any gluten free recipe. 🙂 Enjoy!
