all the Raves for THE GLUTEN FREE MAMA
Hi Rachel - I just had to write to tell you
THANK YOU on all fronts - from the totally unexpected expedited
shipping for the pie crusts I ordered, to the kind email
exchange, to the unbelievably FABULOUS product - dealing with
you and your company has been perfect all the way around. The
following is a review I wrote for a celiac e-list I'm on, and I
wanted to share it with you:
"So on Thursday afternoon, while my extended family were having
cocktails, I made pie - a towering apple pie with a lattice
Mama's crust. I tasted the dough (an old secret pleasure of mine
- I LOVE the oily, buttery pie dough, and this tasted like old
times). One of my favorite pie recipes is from the Silver Palate
Cookbook, and it's the Sour Cream Apple Pie, but my daughter
didn't want that, just a traditional pie, so I compromised. I
made the Mama's crust according to the directions (which I have
to say are nearly exactly like a wheat-based crust), except that
instead of water I used apple cider, and I also added a sprinkle
of cinnamon sugar, too (these additions from the Silver Palate
recipe). The dough rolled out LIKE NORMAL!!
And it went into the pan LIKE NORMAL!!!! And the pie, when it
went into the oven, LOOKED TOTALLY NORMAL!!!!! There was zero
crumbling, zero cracks, just a pretty little pie with it's
jaunty lattice crust bubbling away in the oven. And OHHHHHH,
Mama - it was heavenly - delicate, flakey, tender, not tough,
gritty or odd-tasting. I truly never thought that going gf was
going to taste good, and this really REALLLLLY tasted terrific."
Well, there it is - Rachel, you've got a winner on your
hands!!!!!
That pie was so unbelievably good that my dairy farmer
significant other, who is not gf and terribly disgusted by the
thought of anything but "real" food, ate not only a large piece
of pie on Thanksgiving, but he helped my daughter and me polish
off the rest the next day!!!
I'm so very happy - baking and cooking in general is a "thing"
in my foodie family (my sister is a professional chef, and her
husband is actually a quite famous one.....as I said, cooking is
a "thing" for us), and I truly never thought I'd have a pleasing
experience with pies ever again. I'm already concocting recipes
of my own to use with this crust, and excitedly waiting for
Christmas and my favorite pecan pie. Thank you so very much all
over again, Rachel! If there's ever anything I can do to help
