What is Gluten?
o Gluten is a protein found in Wheat, Rye, Barley and
sometimes Oats.
o Gluten can be harmful to those with celiac disease by
causing an autoimmune response to the body that damages the
intestinal lining of the small intestine. This can lead to
the bodies inability to digest and absorb nutrients causing
malnutrition or a series of other health concerns.
• What are symptoms of Celiac Disease?
o Some people may not have any noticeable symptoms yet still
have celiac disease. It is an inherited, autoimmune
disorder.
o Abdominal cramping/bloating
o Abdominal Distention
o Acidosis
o Appetite increase/cravings
o Back Pain

o Diarrhea
o Decrease ability to clot blood
