Substitutions & Equivalents Baking Guide

Measuring Equivalents

3 tsp. = 1 Tbsp.

4 Tbsp. = ¼ cup

5 ⅓ Tbsp. = ⅓ cup

8 Tbsp. = ½ cup

10 ⅔Tbsp. = ⅔ cup

12 Tbsp. = ¾ cup

16 Tbsp.= 1 cup or ¼ cup x 4 = 1 cup

1 cup = 8 fluid ounces

2 cups = 1 pint

2 pints = 1 quart

4 cups = 1 quart

2 quarts = 1 gallon

Baking Ingredients, Spices, and Seasonings

Allspice 1 tsp. = ½ tsp. cinnamon, ¼ tsp. cloves, ¼ tsp. ginge

Baking Powder = 1 tsp. baking soda + 2 tsp. cream of tartar = 1 Tbsp. baking powder

Chicken or Beef Broth = 1 bouillon cube + 1 cup water or 1 Tbsp. Better than Beef or Chicken bouillon + 1 cup water

Brown Sugar = 1 cup white sugar, organic sugar or coconut sugar + 2 Tbsp. molasses

1 garlic clove = ¼ tsp. garlic powde

1 tsp. ground ginger = 2 tsp. fresh ginger grated

1 tsp. dried herbs = 1 Tbsp. fresh herbs, minced

½ cup soy sauce = 4 Tbsp. Worcestershire sauce = 1 Tbsp. water

1 cup yogurt = 1 cup mayonnaise or 1 cup sour cream

1 cup buttermilk = 1 cup milk of choice + 2tsp. cider vinegar Rest on counter until thickened

Egg Replacements

Energ Egg Replacer

1 tsp baking powder, 1 Tbsp. water, 1 Tbsp. vinegar

1 tsp. yeast dissolved in ¼ cup warm water

1 ½ Tbsp. water 1 ½ Tbsp. oil, 1 tsp. baking powder

1 packet gelatin, 2 Tbsp. warm water.  (Do not mix until ready to use)

Flax eggs 1 egg = 1 Tbsp. ground flax simmered and ¼ cup warm water simmer over medium low heat until it forms a thick gel.   (Many people say 1 Tbsp=3 Tbsp. Water, but I have found that 1 Tbsp= ¼ cup warm water is more accurate to one egg)

¼ cup mashed banana = 1 egg (great in muffins, cookies, pancakes)

¼ cup mashed pumpkin = 1 egg (great in muffins, cookies, pancakes, cakes)

¼ cup applesauce = 1 egg (great in muffins, cookies, pancakes, cakes, breads, quickbreads)

Seasoning Mixes

Taco Seasoning: 2 Tbsp. chili powder, 1 Tbsp. cumin, 1 Tbsp. paprika, 2 tsp. salt, 1 tsp. garlic powder, 1 tsp. onion powder, ½ tsp. red pepper flakes, 2 Tbsp. instant onion flakes.  Mix well.  Use 2 Tbsp. per 1 lb of meat + ½ cup water.

Fajita Seasoning: 2 Tbsp. cornstarch, 2 Tbsp. chili powder, 1 tsp. cumin, 2 tsp. salt, 2 tsp. paprika, 2 tsp. sugar, 1 tsp. garlic powder, 1 tsp. onion powder, 2 tsp. instant bouillon, ½ tsp. red pepper flakes, ¼ tsp. red pepper flakes, ¼ tsp. cayenne pepper.  Mix well Use 2 Tbsp per 1 lb of meat.

Sloppy Joe Seasoning: 2 tsp. Italian seasoning, 1 Tbsp. minced onion, 1 tsp. salt, 1 tsp. cornstarch, 1 tsp. sugar, 1 tsp. garlic powder, ½ tsp. onion powder, ½ tsp. dry mustard, ¼ tsp. chili powder, ⅛ tsp. pepper,  1 Tbsp. Mama’s Almond or Coconut Blend Flour, ½ tsp, red pepper flakes ⅛ tsp. celery salt.  Mix together with 1 small can tomato paste, 1 ¼ cups water.  Add to 1.25 lbs browned hamburger

Large Batch Sloppy Joe Seasoning: 8 tsp. Italian seasoning, 4 Tbsp. minced onion, 4 tsp. salt, 4 tsp. cornstarch, 4 tsp. sugar, 4 tsp. garlic powder, 2 tsp, onion powder, 1 ½ tsp. dry mustard, 1 tsp. chili powder, 3 Tbsp. Mama’s Almond or Coconut Blend Flour, 2 tsp. red pepper flakes, ½ tsp. pepper ½ tsp. celery salt.  Mix together.  Use 3 Tbsp. of mix with 1 small can tomato paste, 1 cup water and 1.25 lbs browned hamburger.

Steak Marinade: ¼ cup water, ¼ cup oil, 2 Tbsp. red wine vinegar, 2 Tbsp. minced onion, 1 tsp. garlic powder, ½ tsp. onion powder, ½ tsp. ground pepper, ½ tsp. salt, ½ tsp. dry mustard, ¼ tsp. paprika.  Mix all ingredients and pour over steak and marinate 1- 4 hours.  Cook as desired.

Fried Chicken or Beef Breading: 2 cups Mama’s Almond or Coconut Blend Flour, ¼ cup gluten free bread crumbs, 1 tsp. garlic powder, 1 tsp. onion powder, ¼ tsp. pepper, ½ tsp. salt.  Mix together.  Mix together 2 eggs with ¼ cup milk.  Dip chicken or beef into egg, then flour mixture, then place into fryer or onto baking pan.  (If using baking pan, place small slices of butter across the top, or drizzle with oil.

    I have just learned I am allergic / sensitive to wheat, oats, rice, yeast,eggs, milk, almonds…almost everything that I can bake with, so I have gotten some coconut flour but not sure how to use it. Is it possible to make just regular bread so I can have toast when I’m missing all the ingredients ?

      Is it straight coconut flour or a blend? Coconut flour needs to be be blended with other flours or you will not be happy with the end product. If you blend it with a variety of gluten free flours then you can make any gluten free recipe with it. Or you can use Mama’s Coconut Blend.     You need to check your conversion from quarts to gallons. Believe there are 4 quarts in a gallon!
